chore(release): prepare v0.1.0 for public Packagist tracking 

Drop the dev-time Forgejo/GitHub VCS `repositories` blocks and pin inter-package
deps to semver (^0.1.0) so the package resolves purely from Packagist. Point the
SFU sidecar fallback download at GitHub releases instead of git.blax.at.
